
HealthierU is launching the third wellness challenge of the year for university employees. Registration opens March 3 for the Eating the Rainbow challenge. The purpose of this challenge is to bring more awareness to how often we consume fruits and vegetables.
Over the course of the three weeks, participants will record how often they are eating fruits and vegetables, find creative ways to increase their fruit and vegetable intake and incorporate new fruits and vegetables into their weekly meal rotation.
Each week of the challenge will focus on a new goal. Week one will have the goal of building a habit of recording how often participants consume fruits and vegetables. Week two will use the MyPlate plan maker, calculating what their goal fruit and vegetable intake should be and aim to reach a minimum of 50% of that daily goal. Week three will use the plan created in week two, aiming to reach a minimum of 75% of that goal and try at least one new fruit and vegetable.
The challenge begins on March 10.
