Meal Kit Mondays are back for spring semester

Available on select Mondays each month starting in February and continuing through April at the East Campus Rec and Wellness Center, Meal Kit Monday packages include ingredients and a recipe card to prepare a full meal in less than an hour and serve up to four individuals. The $25 pre-packed kits make meal prep easier for students and members of the campus community.

Feb. 24 entrée choices

  • Creamy Parmesan, Pea and Tuna Pasta
  • Plant-based Chorizo Huevos Rancheros

March 3 entrée choices
orders must be received by 11:59 p.m. Feb. 26

  • Sheet Pan Pork Chops with Veggies
  • Plant-based Skillet Lasagna

March 10 entrée choices

  • Baked Tilapia Chimicurri Rice Bowls
  • Plant-based Tuscan Turkey White Bean Soup

April 7 entrée choices

April 14 entrée choices

  • Plant-based Pork Cauliflower Fried Rice

April 28 entrée choices
orders must be received by 11:59 p.m. April 23

  • Harissa Chicken and Beans
  • Mongolian Turkey, Rice and Veggie Bowls
  • Plant-based Mediterranean Salmon Bowls

Orders can be placed online. Kits will be ready for pick-up from 4:30 to 5:30 p.m. on the assigned Monday at the Wellness Kitchen inside the Rec and Wellness Center on East Campus.
