Chinese cooking class features chicken chow mein, pineapple beef

The Confucius Institute is offering a cooking class on how to make chicken chow mein and pineapple beef dishes at 6 p.m. May 19 in Ruth Leverton Hall.

Chicken chow mein has been a well-loved dish in the American Chinese restaurants for more than a century. Chow mein means “stir-fried noodles,” which can be served as a one-course meal or a side dish. The restaurants in different regions provide different “chow mein” dishes — some are softer, some are crispier and drier, and some are deep-fried crispy noodles.

The Confucius course will feature pre-cooked soft noodles stir fried with chicken, vegetables and mixed sauce.

The pineapple beef recipe is a homestyle dish adapted from pineapple duck. It is Cantonese cuisine, which are recipes that feature fruits added to meat dishes.

The class will feature step-by-step recipes, instructions, demonstrations and hands-on experience. Participants will be able to taste the dishes prepared. Confucius Institute instructors will teach the course.
